Easy Kale Chips

Why you’ll love this: These kale chips are a simple, nutritious way to use the kale you grow in your garden and are a nice alternative to sautéing kale or eating kale salads. Kale is rich in vitamin K, vitamin C and is loaded with micronutrients and antioxidants.

Ingredients

  • 1 Bunch fresh kale
  • 2 tsp olive oil
  • salt, garlic powder, and pepper

Substitutions

    Substitute salt, pepper, and garlic powder with your choice of seasoning. You can also season these with nutritional yeast for added protein, iron, and B vitamins.

Instructions

  1. Preheat oven to 300 degrees F
  2. Chop kale into 1 inch strips
  3. Place kale on a baking sheet and sprinkle with oil and seasonings
  4. Bake in oven for 15 minutes stirring approximately every 5 minutes until the desired crispiness is reached.

Notes

This recipe can be made with any type of kale. We grow curly kale and red russian kale, so that is what I prefer to use, but any will work. These are best served fresh, but can be saved in the fridge for a few days, although I do think they get a little chewy.
